This is meal prep mastery. Uncomplicated, affordable, and delicious. Think bolognaise sauce with a Mexican twist, then the humble baked sweet potato as the carb to tie it all together. The combination of a tomato-based sauce with mexican spices just works and makes your meal prep something to look forward to in the day!


This recipe has become a staple in my home for a handful of reasons. One being how mindless and easy it is. Baked potato and a one-pan mince. It’s effective, flavoursome, and is one of those recipes that after you’ve made one or twice it can stick in your head and you can make with your eyes closed.

Mexican Style Mince with Sweet Potato

This uncomplicated recipe makes for great meal preps or a family dinner. Think bolognaise sauce with a mexican twist and a simple baked sweet potato for your healthy carbohydrate.
The key is the stock cube along with the mexican spices to really change this meal from a classic bolognaise to something new entirely! Just pop your sweet potato in the oven, cook up your mince, pair then together and there you have it!

Ingredients

  • 500 g turkey mince* (Note 1)
  • 2 medium sweet potatoes (700g) diced in 2cm squares
  • 1 red capsicum diced
  • 1 medium carrot diced
  • 1 small brown onion finely diced
  • 1 mexican spice sachet OldElPaso or any sachet brand
  • 400 g diced tomatoes
  • 1 tbsp tomato paste
  • 1 cube beef stock (sub chicken or veg stock cube)
  • 1 garlic clove minced
  • ½ tbsp olive oil

Instructions

  • Preheat oven to 240°
  • Bake sweet potato – Spread the diced sweet potatoes on a baking pan (use baking paper so it doesn't stick) and toss with a dash of olive oil and salt. Put the potato in the oven to cook for 15 minutes or until easily pierced with a fork.
  • Cook mince – Meanwhile to a pan on med-high heat with a spray of olive oil, brown the onion and turkey mince. Then add in the vegetables and garlic. Cooking for 4-5 minutes to soften the vegetables.
  • Add the sauce – Add in the diced tomatoes, tomato paste, mexican spice, and beef stock cube. Stir to combine, bring to a simmer, the turn down to a low-medium heat and let cook for 5 minutes. This will allow the flavours to combine.
  • Serve – Spoon the mince over 4 dishes or containers, then top with the sweet potato. Can be served topped with fresh coriander or sour cream.

Notes

  1.  You could also use extra lean beef or kangaroo mince.
  2. This recipe can also be made as a “bake”. After the mince and sweet potatoe is cooked, add the mince to a large baking dish, top with the bake sweet potato, then crumble fetta over the top. Bake or grill until the fetta is melted, then serve.
